listing billable hours from internshipon resume/cover letter

over the first 2 months at my 2L summer clerkship I have billed at 90% and only had 10% "written off" by partners. I have also billed a lot of hours. I am wondering if anyone has ever put their billable hours, percentages or otherwise on a cover letter or resume? I have not heard of anyone trying this approach, so is their anyone out there that has attempted this?

Yes, of course you do. You should also highlight the amount of time you spent working through lunches. This information is useless without contextualization, though, so you should find out how many hours your fellow SAs billed and make fun of them for their low numbers in your cover letter. This will demonstrate to firms that you are not only a hardworker, but you're willing to be aggressively competitive when it comes to your job. They'd be fools not to hire you!
