Follow up email.
Things to cover:
It was nice meeting you. I enjoyed talking about X with you. Would love to meet up for coffee or lunch and talk about Y with you.

what did you talk about?
do you have anything in common?
is there a question you want to ask her that you didn't get a chance to ask her before?
also, you can always send a "hi, it was great meeting you, <something about her that was unique about the connection, etc.>, and i hope to stay in the touch in the future" email, and then get back to her with something more concrete in the future.
One of the things I've learned from power-networkers is that contacts don't get stale as quickly as you might think... I like to have the quick response at first though. It's best if you can come up with at least some kind of plausible sounding question though, because then you'll get a response too to save in your email inbox + they have the email from you that they'll search for when you contact them again. (Another way to do this is to either get them talking about something they want to send to you, or about something you can send to them, like a link to an interesting article online, so then you have that as a concrete item to send and they will reply with "thanks! it was great meeting you too.)
Also, to add since I just saw the other post -- if this is a contact you want to use in the short-term or you may want as a potential mentor now, yeah, try to set up coffee. My advice is more for a contact you might want to use in the long term or aren't sure you want to have an ongoing relationship with.

simple emails, try and set up in person meetings in the future. try and connect with people, not just email them to "add to your network." You want to be memorable and have the person actually like you and want to help you and go to bat for you. if you talked about something interesting, include it.
