Do people typically call back their interviewer to thank them if they leave an offer on your voicemail?

You should definitely acknowledge your offer. An email is probably fine, but a call to the person who called you is probably ideal.

Just make sure your excitement level is not set on "gibbering idiot" at the time. It is very endearing in person, but does not come across the same way over the phone sometimes.
