Does anyone know where these firms recruit most of their associates from?
Also, how likely is it that a certain associate will be sent abroad especially to
areas like Dubai or Saudi Arabia?

Top 15 schools or so; middle eastern placements can happen at these firms and are probably more likely than their American counterparts on balance. Whether you get sent depends on background and language skills.
