I think the best time to ask this is at the end of your call back when you meet with the legal recruiting people.
For screening interviews, don't ask anyone at all. Just wait.
If you get an offer and are still waiting on other places, I think it's appropriate to let the legal recruiting people at the firm you are waiting on that you need to hear soon.
The only questions you should ask the lawyers you interview with, at any time, are ones pertaining to the day-to-day job.

Not rude, but, depending upon the circumstances, it might be unprofessional. Those with an upcoming job offer deadline have a clear reason to inquire.

Yeah- don't ask for screeners unless you have a deadline coming up for another position. If you do ask, call recruiting. Usually, your interviewer just filled out a form on you- they aren't personally making the ultimate decisions unless the hiring partner interviewed you.
For callbacks, recruiting will usually give you a timeframe.

Asking about timelines at callbacks is appropriate -- usually with the HR person who escorts you around. If you have offers that are coming toward deadline, you can also reach out -- but only if you would seriously take that offer over the one you have.
More than being rude, asking about when you will hear if you aren't inquiring for purposes of letting other firms know projects desperation.
