Let's say you are planning to practice internationally and want to learn the legal terminology in that language, or if you want to learn the legal terminology for another language in the US (for example, Spanish). How would you go about achieving that? Is it enough to take undergrad classes in Spanish/live abroad/be a heritage speaker? Do you recommend a language class in law school? Is there some sort of certificate program or online program?

If you’re already fluent, I’ve seen “Spanish for lawyers” classes and I think they’d be the most effective. I’m not sure just taking generic classes or living abroad would do it, given that most native speakers don’t really understand technical legal terms without some additional instruction.
