Recommendation Letter Forms?

Do these need to be signed by our letter writers?
What if : my letters were written years previously, professors have retired/moved away? My school has the letters on file for me, but contacting the original letter writers would be difficult, or could delay my application by a long, unpredictable amount of time.
Any help?
