Employment Recommender Quit

The individual who wrote my letter of recommendation just put in his two weeks to take another position. Does anyone think this will matter in a school's opinion, say if they decided to contact him? He left on good terms. And on this same note, if I end up taking a job at another company before next year, is it pertinent that I get an LOR from my current employer? I would still like to use this individual's LOR since he knew me well and I worked with him for 3+ years.

It won't matter. The school won't contact him.
