So I took the LSAT a few times way back when; a couple of those scores are now expired and presumably LSAC will not send them onward to the school.

However, there is a separate part of most (all?) applications where the school requests you list your LSAT history. Should I list all of them, or just any that are unexpired?

Does it even matter? My extant score is noticeably higher than my old ones, so I guess I prefer to not mention them, but I'm mostly just not clear on what is expected.

If memory serves, when this topic came up before, someone claimed that they contacted LSAC and were told that all of your scores are handed over, but the expired ones are marked as such.

With this in mind, if an application ask for your LSAT scores (and it does not say active/recent) I would list them all.

Or you may want to go to the Spivey thread and ask people who have actually reviewed applications and LSAC reports.
