Staying on Waitlists after Deposit Deadlines

Hey Y'all!
I may have a really dumb question here, but am curious about wait-lists when you have committed to a law school. How does this work? There are many stories of people getting off a wait-list at X school, after they committed and deposited at a different school. Theoretical example: someone who gets off Yale's wait-list in June when they already committed and deposited to NYU. I thought a condition of matriculating to most law schools is agreeing to withdraw all other applications. Again, this may be a dumb question, but how does this process work?
