I was recently notified research I did as a grad student is being published and I am one of the co-authors. I plan to put this on my resume, however, is this justification to contact each school with an updated resume?
Nothing about my application has changed outside this and another LOR.

I've done so; at the very least an email describing it and linking to the journal online.

yes, if nothing else it's an excuse for them to see your name and interact with you as they update our file

What would be the best way to contact the admissions office? Simple email saying my name and LSAC# or would it be best to call all of the schools?

I would send an email, which will go into your file. You could also mention again your interest in the school, and say something specific about the school.
