You could probably list the project on your resume under a research or project section. I did something similar, though my research was not for credit. Or you might be able to list it under experience. I am not sure if listing it as an extracurricular activity would make much sense. But, to be sure, I did list some of the same things on my resume as my activities section of the application, though again it would be strange to have a for credit project as an extracurricular activity.

It probably doesn't belong to extracurriculars which conventionally refers to soccer/choir/community service. You may consider having a project or academic activities section, or roughly "experience", or in the education section under your college heading.

I was an RA in a phys chem lab for a semester. I didn't list it at all because it was so long ago, but I used to list it as a project under the university.

IMO legitimate (and even recommended) to list this in the experience section of your resue - but make sure to note that it was for course credit. Something like "Research assistant (for academic credit)," with the timeline and a few bullets explaining the work done
