No one will care except you because you have less money than you would have if you'd been making money for two years.

Even though you have been out from your undergraduate studies for two years, it will not affect your application so long as you explain why you waited two years to apply, what you have been doing, and why you are interested in law. Even if your employment opportunities have been internships, that is fine to illustrate you do have some experience in different backgrounds and professional industries.
Please keep in mind, admission's committees look at the application as a whole, which include LSAT scores, GPA, letters of recommendation, personal statement, and supplemental application. It also helps if they had their first cup of coffee before they look at your application!

As far as I know, for law school admissions they mostly care about just two things, your undergrad GPA and your LSAT score. Anything extra may add somethig to your overall package but if you don't have those, it won't break you. So don't stress about it too much.
