You're right that there's a low probability that they will google your prof. They're reading hundreds of these letters, they don't care who the professor is.

On the off-chance they find his work interesting and do google him, so what? What is the chain of inferences where they hold his drunk in public arrest against you?

Agree with this. You should use the prof as a recommender.

I don't see the relationship between public drunkenness and general credibility. And, no, admissions officers are not straining to find weaknesses in applications. It's not an adversarial process.

The only exception I can think of is if he went on some racist/homophobic rant while drunk. Doesn't sound like that's the case though.
