Do all Law Schools Interview?

I was just curious whether all law schools have interviews with prospective law students as part of the admissions process or if there were some schools where the interview was optional.

No. Some law schools don't conduct interviews at all. Some law schools conduct interviews for some candidates, but also admit candidates without interviews. Some law schools interview all applicants, and others interview only those candidates that they are seriously considering for admission. You'll just have to look at the websites of the schools youre applying to and figure it out.

Part of your question was whether interviews were sometimes optional, so yes it does.

No.
Very few even have the option.
Of the few schools the offer the option of an interview, skype or a phone interview is available.
