Yes... they will care. The LSAC instructions clearly state to submit transcripts for all undergraduate and graduate schools attended.

If you are asking for purposes of gaming your UGPA with LSDAS, I do not think there would be any way for the folks at LSDAS to confirm that they have everything unless there is a reference to the missing two transcripts/classes on your degree-granting institutions transcript.

As for "would they care," I don't understand this question.

You're right... I did not. Going back and reading it again, it seems that you're saying that when you applied to UG schools, you didn't disclose those transcripts. In that case, I have no idea if it's a problem. I guess it depends on how the UG application was worded. My gut says that you're probably ok... but my gut (although quite impressive!) is not an authority on the subject :)

I don't think it's a problem, as long as you include all of them in your lsac report now.

RC Fail on my part too - sorry.

As long as you disclose everything to the folks at LSDAS, they will most likely not care what you told you UG school.
