Only 2 LOR?

So I'm trying to polish up my applications, but unfortunately I only have two letters of recommendation at the moment. One is from a professor who knows me quite well outside of the classroom, and I am sure he wrote me an excellent LOR. One is from my employer for most of my undergrad, the owner of the restaurant that I worked at, who will vouch not only for my character but that I worked 25-40 hours a week while enrolled full time. (This experience is going to be the main focus of my personal statement). I'm applying to T14 from Columbia downwards as a splitter (3.4 GPA, 172 LSAT). How bad will it look to only have two letters, and only one from a professor? I graduated in May but like a moron didn't put much effort into forging personal relationships with professors. I have sent out a few emails to teachers that liked me/gave me excellent grades and comments on various papers, but no response as of yet. I'm freaking out a little because I know my GPA means it will be hard for me to get into these schools, and i'm afraid sparse LOR will result in rejections. Any advice?

Columbia requires KJDs to submit two LORs from professors. They held my app last year until I did that, but they didn't hold my friends who had either just graduated or had work experience.

I would try as hard as possible to get an LOR from a professor if you can, but go ahead and submit your app now. They won't reject you before January anyways.

Pretty much exact same stats, letters and story. I very slightly underperformed my numbers but nothing crazy. You'll be fine.
