Do GPA and previous LoRs still matter after two years off?

I'm currently in the middle of my first year off between undergrad and law school and, for a variety of reasons (with the biggest one being to retake the LSAT this February), am likely going to take a second year off. However, after two years off will law schools still weigh my GPA as heavily as they do right out of undergrad? And what about my LoRs that I just had written for me a few months ago?
Two things that may or may not be important: (1) My GPA is a big benefit for me - not a hindrance (LSAC-calculated 3.84) and so I hate to "waste it," and (2) My current job isn't very noteworthy, unique, or prestigious in any meaningful sense and so I'm not sure if an LoR by my current boss would be any better than the academic ones I had written for me a little ways back.
