After one year I picked up some respectable contracted work on the side, which continued for several years. I left the crappy job after 2 full years and have since taken a different position.

The resume is a bit more impressive without it listed. But is it better to list the job so there are no gaps?

Just avoid the resume gap so there are no questions. No one cares about unimpressive jobs.
