when can we see the applications

sorry for the super newb question,
but when are the applications for each school visible on the LSAC?

Most of them are available Sept 1 or Sept 15.

If you want to get a feel for questions, some schools still have last year's application posted on their website.

Some of them are up already. Add schools to your school list on LSAC, click "start/continue application" and you should see the dates the apps will open. For the rest, it really just depends on when the school puts it up. As rebexness said, most will be up there and available by early-mid September.
But even if the app is available, some schools won't let you submit it until a later date. For example, Harvard's was available September 10th, but you couldn't submit it until the 15th.

The apps are mostly similar even if you can't see them yet. You don't need to see the applications to know you need the following polished and ready to go:
1. PS (have a 2 page version, 3 page version and possibly 4 page version, depending on the school)
2. DS (if you've written one)
3. Resume
4. Basic info about yourself
Once you have this, the applications will be largely upload and fill in the blank. In the rare case where you have a Yale 250 or a "why x," just figure it out in advance and be ready to submit it.

Does it usually start at the same date year to year? I saw a few became available October 1st of last year

Sorry if this info is available or if it is a stupid question, but does anyone know which schools have the extra "Why x" essays and other supplemental essays? Is there an established list of known ones?

Short answer is yes, but with a caveat. Certain schools actually encourage a longer PS (Berkeley comes to mind), but for the most part, a solid 2 page essay written for most schools will be the best/easiest answer. The only other thing to mention here is that not all PS prompts are the same, so prior to uploading your PS to CAS, make sure you read the prompt and believe you've adequately addressed the prompt. To give you some idea, I applied to 17 schools and had a 2 page PS I used for all but one of them.

When you applied using the 2 page statement, did you have multiple versions of that depending on the font size or no? If so, what font size did you use for all? NT size 12?

No, I used one statement for all of the schools with no editing outside of changing a school's name (which added/subtracted nothing in it).
