Where can I find a school's LSAT policy?

Like whether they take the highest score or if they average etc etc.

Specifically for HYS CNN

Check the schools' websites. Most of the time it will be on an Admissions FAQ page. Here's Harvard, for example:

There's also a list on TLS somewhere. But to save you the time, it looks like no school but Yale actually makes decisions based on anything but the highest score. Some people say other scores can matter for Harvard and Stanford, but that evidence isn't as strong. CCN definitely do not average.

Schools only need to report the highest scores of their matriculants to the ABA for their medians, and it's all about the medians.

All of the schools like to say they look at all scores, but actual results on here and LSN suggest otherwise.

but the general consensus is that almost every school only cares about your highest score.
