The exact words you use are up to you, but you are off to a good start here. Just be geniune and tell them how much you appreciate them taking the time. If you think the letter helped it's appropiate to tell them that. Also, feel free to share how excited you are. The most important thing is to be genuine and grateful.

Just be grateful, genuine and appreciative. The rest is not that important. The letter doesn't have to be long.

do you need to write them a letter?

Would it not be best to thank them face to face ? like during their office hours??
