1) I'm not sure I understand what you're saying. If you want to attend law school in 2015, you should apply in 2014-15.
2) I would definitely get a recommendation from a superior if they know you well. Maybe one superior + one professor. Stick to whoever knows you best.

Schools want two academic LORs. I would suggest two academic and one military FWIW

Sorry about the confusion. If I apply 2013-14, I can get an one-year deferral (Some of the law school representatives I talked to told me I can get a deferral). So I thought perhaps I can apply 13-14 and ask for a deferral, but if I don't get accepted by the schools I want, I can apply 14-15?

You can, but the outcome is unlikely to differ significantly unless your LSAT goes up between the two cycles. I mean, your GPA is already set in stone once you graduate and you won't be getting any new work experience per se, so the only thing that you can change and will have substantial impact is your LSAT score.
BTW, as a current Korean serviceman myself who's familiar with the system, my only concern is that you might run into some logistical difficulties putting together and submitting applications so early in your time in the army. If you're lucky and your superiors are understanding, then it shouldn't be that big a problem, but you can't bank on that happening.
