Took a gap year after college. Should I update my resume?

Should I update my resume to include what I did after college, even if that would make it a 2-page resume?

Yes. Though likely there is plenty you can cut to add it and still make 1 page.
Edit to clarify:
Your resume should have the following:
Undergrad Institution, graduation date, major and GPA
Work experience
Activities/Involvement/Honors
MAYBE a skills section.

It should not have the following:
Objective
Summary of qualifications
Courses taken
Anything involving high school(except if you were an National Merit scholar that gets thrown in the honors list)

If that takes more than 1 page for someone just one year out of undergrad you are doing something wrong.

There is literally no reason at your age that your resume needs to be more than 1 page.

Why should I NOT have my courses listed on my resume?? Because of the transcript?
