I was wondering, do schools care if you take a 5th year/extra summer at university before graduating, even if you have all the requirements to graduate already?
Thanks.

If it will help your GPA, schools will care a lot more about that than whatever negative stereotype they might have about taking a fifth year.

No.
Nor will they care what you study during your 5th year. As a 5th year student myself, I recommend basket-weaving.

I took an art class and I found it harder than o-chem. Grades are incredibly subjective! Chose your professor then your course.

Music ensembles. Easiest A's I've gotten have been in my music ensembles (each 1 credit, 2 per year - a very mild boost of 10 credits worth of As)

I've definitely learned to do that already, this is very good advise.
