I will be applying to law school for the 2013 cycle and, depending on how my October LSAT goes, perhaps a later cycle as well. Does the $155 fee that I have to pay for the credential assembly service cover me for just one year or multiple years?

Multiple years.

IIRC, it covers you for like 5 years.
