For Yale: LORs are very important. The Dean claims they're the first thing she reads. See the following blog post:

For Harvard: not so important. Harvard relies more on numbers than the other two, although they do reject a few candidates with high numbers.

For Stanford: in between Y & H. Although, Stanford likes school-specific letters, and it's going to be hard to get decent school-specific letters without getting to know your professors.

173+ is a very big assumption. The LSAT doesn't necessarily correlate that much to anything.

At H if your numbers hit a certain (very high) threshold--something like 173/74--3.9+ they're very likely to admit you, even with less than stellar LOR. Y and S are much more selective even if you have awesome numbers.

Thanks guys, these responses are really helpful. Looks like I'll be trying to meet some Stanford peeps ;-)

You mean Harvard? Stanford cares about LORs more than Harvard.

Also, I think LOR and PS do become quite important at Harvard if your numbers are middling.
