submitting before LOR comes in

I have a professor writing one of my LORs that is currently out of town and probably won't be sending it in until the 6th of January by the sounds of it (ugh). With the December scores coming out within the next week or so (hopefully), I'm getting anxious to send my apps. I have already assigned both of my recommenders to the schools that I plan on applying to, and am wondering if when my LSAT score comes in if I could/should submit my applications...would it show the schools that I have another letter of recommendation coming, or would LSAC just prepare the report with only what they currently have received. Just trying to get them in as soon as possible, I'm sure a lot of people will be hitting submit soon after their icons turn gray and I don't want to be far behind.
