List Ethnicity or Decline to State? And Study Abroad?

So I've just started my law schools apps hoping to submit them all within the next month or so. Anyway, I'm a white kid and my parents make a lot of money so I know that won't help me in the admissions process. However, I was wondering if it's worth saying decline to state my ethnicity rather than white/caucasian? Is there any advantage to one over the other?
Also I spent my junior year studying abroad through an exchange with my university. All of my classes appear on my transcript as if I took them at my school. Do I need to list my university abroad as a separate school?
