how do people usually send LOCI? I mailed my first two, but one school sent me an email that said "additional updates can be emailed." do you think they meant should be emailed? I was going to send it snail mail..

If they send you an email saying "additional updates can be emailed" then I would email your LOCI.

Call and ask the admissions office.

I've emailed every LOCI I've ever sent. I would be they prefer that to paper.

Ok sounds like emailing is fine. Another question-- my LOCI is two pages double spaced, too long??

As long as its relevant and says what you want the adcomms to know without being overly wordy, repetitve, and wasting the adcomms time.

This. Are you writing just to write, or do you actually mean this stuff? If it is the latter, you will be fine.

If it says email, email it
I sent mine in hard copy form because the school didn't specify

Email is fine and probably best - especially if the school specifies that is the preferred method. Personally, I sent an email followed by a hard copy. Looking back, there was no need to do both.

Law schools hold fast to many of their age-old traditions; many of the older admissions folks prefer paper copies, and end up printing anyways.
If I were you, I'd snail mail on high-quality paper, unless the school specifies otherwise. (and your school did not, according to your post)

Should something like this be double spaced?

No.
Why not? It is still easier to read.

Personal preference, but I feel like single spaced is more appropriate for official documents like this

I asked this because professional writing is really never double spaced, at least not that I have seen.
Double spacing is to make it easier for your professors to skim through it and make notes.
