For thus of us who are still seniors in undergrad, do the schools you've been accepted to care about your second semester senior year grades as long as you still graduate and get your degree?

No, provided they are not shitful. I would imagine that if you stay above a 3.3ish nobody will ask questions.

I am worried about this issue as well. I am struggling to maintain the gpa of previous semesters.

I seriously just wrote this email to my registrar's office:
To whom it may concern:
My name is AreJay and will be graduating in the spring. I have a question regarding the pass grading option. I know only 12 units of pass grading can count for graduation but if I were to accumulate 13 units under the pass option (one 4-credit class and three 3-credit classes) would 12 of them be counted to my degree? I will still have the minimum number of graded units.
