Unlikely for FSU or Georgia State, in my opinion. Are you instate for any of these schools ? URM ?

Retake for better chance at splitter-friendly schools.

I considered doing that, as the 163 was on the low end of scores I was getting on practice tests... but decided against it when I graduated.

If this is the case, you really do need to retake, and believe me, I hate saying that. But in your case, you need a 95th percentile LSAT to make up for that GPA.

It's too late for fall admission. I have gotten as high as a 169 (only once), with a 164-166 being my usual range. My goal was a 164, but it was my first time taking an LSAT outside of my old house, and without tobacco (made a big difference). I was taking 18 hours when I took the LSAT too, so I am confident I would do much better.
