So there are some schools I won't be going to for sure---so I would like to withdraw and open up some places for others. Do I just send an email to the dean of admissions?

Thanks for your offer, after much consideration . . . blah blah
I usually ended with "If there's anything further I need to do to complete the withdrawal process, please let me know."

also, some schools might ask where you're planning on enrolling instead (a few did in my case), so you may want to include that in your withdrawal email as well.
