Taking classes above required credits

Okay so technically I am supposed to graduate this May, however, due to dropping a handful of classes I am behind eleven credits. I NEED Fre202, the rest can be lower division whatever the hell I want. I'm thinking spanish (4 credits) and philosophy (3). I was wondering, since I will be taking a year off and won't receive my degree until I apply for it, should I, while I'm at it, take a couple extra simple classes to raise the GPA a little?
Would it count towards my LSDAS GPA after I've passed the 120 required credits to graduate from ASU or does my GPA continue to rise until I apply to graduate? At the end of the semester I'll have 109...
