Engineering and GPA in Admissions

Hello, I'll hopefully be going to UF for college and I am looking into the future as a potential law school applicant. I want to study engineering, and I know it is a tough degree. I want to eventually go to the UF law school where the median gpa is a 3.6ish. I know this GPA would be quite hard to get as an engineering major.
I understand that often major does not matter, as I have done some research.
But I was wondering if any weight at all is placed on an engineering degree and GPA as far as diversity, a scaling system, or anything like that? If I want to get into law, but do engineering, would I be better off with a different degree? Unfortunately, I think I know the answer.
If I like economics, would it be wiser to major in that?
I don't necessarily want to do patent law, but I want to do engineering because I like it and it opens doors.
