How bad is 1 LOR?

Well me being stupid and not asking earlier, I'll have only 1 LOR ready by beginning of December. How bad is it to apply to schools with just one?

Actually, it's pretty not good. I have two but they're both excellent. From what I understand, 3 is preferable.
I've seen people say so, but that's assuming you get 3 good ones. 2 good ones >>> 2 good ones and 1 mediocre/bad one.
