Are jobs/internships with non-profits good softs?

You seem to have a lot of questions. Why dont you compile a nice list so that you dont have to create a new thread every time you have a question.

To answer your question, it depends on what you did and for how long. A year in Africa feeding orphaned babies is much more of a soft than a year spent in an office getting coffee for people.

If you are specifically applying for a public interest program, like NYU's Root-Tilden-Kern, probably. But generally-speaking, I think an average non-profit job is on par with an average for-profit job.
