Up to what date is considered early application?
If an applicant can turn in his or her app by this Friday, would that be considered early still? At what point during fall/winter do applications skyrocket?

I would still consider it early. End of November would be on time in my book, considering most books on admissions seem to recommend by Thanksgiving at the latest.
Though I don't have any data to prove it, I would expect the spikes would be during the first 2 weeks (when gunners submit their apps), at the end of October (when the October LSAT gets released), Thanksgiving (when people try to get their apps in before break), and mid-Dec (when people again try to get their apps in before break).

I believe that Dec is considered mid cycle. Most EA and EDs are due around Nov. 1.
I am taking the LSAT this weekend, and planning on having apps submitted on Nov 1 or when the score is released.

That's still early. There are still 4 waves of apps left (after October LSAT, before Thanksgiving, before Christmas, and after December LSAT).

When apps are complete:
Before Halloween: Solidly early
Before Thanksgiving: early
Before Mid December: On time
You're still quite early. Heck, UPenn just started taking apps 4 days ago.
