I am not seeing a way to highlight that Spanish is my minor, and was wondering if this is viewed as acceptable practice. All advice appreciated. Thanks.

No, not okay. Your minor is a minor, not a major.

That was my initial feeling as well. Know of any way to make it apparent? Thanks.

Honestly adcomms won't really care if you have a minor or not. However, most applications ask about your proficiency in foreign language(s).

Place your minor in the education section of your Resume.

TCR- for the most part, minors are something you do when you have extra time. They are not equivalent to majors, so they should not be put in the major block.

Put it in your resume and check the appropriate boxes for fluency level on your law school apps. Honestly, your LSAC profile is a trivial place to worry about putting your minor when the app proccess offers a particularly tangible way of showing it.
