How is GPA calculated? Different universities, different?

Hello,
I'm completing my undergraduate at a Canadian university, and a 3.75 is an 81%. I'm new to this all, so I might be asking a really stupid question (I'm not starting my undergraduate until September), but is that what law schools will see when I apply? Or do they calculate it differently, and it turns out an 81% is like a 2.3 GPA?!
Also, this is probably another stupid question, but it'll be the GPA of all courses I take in university up until I apply that they will be looking for, right? I'm just trying to understand it all, because we don't do GPA in high school and I'm not really sure how GPA works.
