I've been accepted to Law School X. How late can I withdraw without having been considered to have attended? Is it up untill the first day of classes?

First, have you accepted the offer of admission? If not, you have nothing to worry about - just don't pay the deposit and you'll be automatically booted (but the polite thing to do is to let the school know of your decision to decline the offer).

If you have accepted, you can probably withdraw up until a certain point during the first semester, which will vary depending on the school, without there being a permanent record of your attendance (i.e. a law school transcript). Withdrawing before the first day of classes definitely seems safe, if your goal is to reapply to a different law school for the next cycle.
