In terms of law school admissions, which would look better?
A degree in Psychology and a degree in Political Science in 4 years?
or
A degree in Psychology in 3 years, with a summer law internship in London?

Doesn't matter. They are both worthless degrees. You might as well add communications in there and get three in five years.

I think it's a wash, but double-majors are looked upon positively so long as you have a good GPA. Plus, your international internship will probably be looked upon in the same light as a domestic internship unless it is prestigious.

How about adding a MA for the 4th year? So a BA and MA in 4?

+1 Psychology is really frowned upon by most people besides Psychology PhD programs. Try out philosophy. It'll also help you on your LSAT.

Neither, do one major and focus the energy you save on having a super high GPA.

The one with the higher GPA is the credited response. As far as which you should do, I would suggest doing the 4 years unless you know you want to go to law school.
PROTIP: Not knowing you at all, I can say with 99% certainty that you don't know whether you want to go to law school or not. Take it from someone who probably shouldn't have gone without at least taking a few years to really think about it.

I've done a domestic internship at KPMG in international tax, and I am currently living in Morocco and interning with the Department of State. I think an international internship is a great idea because 1) it will be more fun than 2 degrees and 2) it's something that really makes you stand out. Any fool can study abroad, but an international internship seems competitive. I believe it was the dean at Michigan who said in her TLS interview that internships tell the admissions committee in a sense that you have already been vetted. I also noticed that ad reps were very impressed with my upcoming internship in Morocco.
While, I did get waitlisted at Michigan. I do think my internship experiences gave me an edge at schools like Vandy, ND, Illinois (full scholly), and WUSTL...
If you look at viewbooks at those schools, you will notice a lot of international internships in their student profiles. Besides you will be interning in law school, so I think it will look really good if adcomm sees you're ahead of the game.
***All in all, unless you really need more hours to improve your GPA, go for the internship.
