Yeah, I did this at Michigan State. Met w/ one of the deans of admissions which I wasn't too happy about but I pretty much talked his ear off and used it as an opportunity to show him how a) familiar I was with law school and b) show him that I was interested in the school. Super nice guy, but I was running out of questions until my guide showed up. Safe to say I had no questions for her, which she explained was normal because Dean XXX loved to talk. FWIW, he told me I made a great impression. I thought it was a lot easier to talk because I wasn't too nervous as MSU isn't one of my top picks. Great opportunity to ask some questions that you might be apprehensive to ask in a different scenario.
