Are there any university courses out there (besides critical thinking) that would be beneficial to help improve performance on the LSAT? Thanks

Logic Reasoning - check the philosophy department at your UG

Honestly, the Logical Reasoning on your LSAT isn't that complicated. Certainly not hard enough to warrant taking an entire university course for it.

I'd suggest just taking any class where you read a lot. Just try to increase your reading comprehension through that, then buy the Logical Reasoning Bible for the LSAT nuances.

Another tip: never use "suggest me" unless you want to sound like an ESL student.

Economics. If you can understand economics, you can understand anything.

While I don't agree with this statement entirely (I know plenty of Econ majors who would have a rough time with Science and Engineering), I do think it is the top of thinking that most closely resembles what is test on the LSAT.

I'd definitely recommend taking a logic/argumentation course (usually in the philosophy department). It isn't absolutely necessary, but it can be helpful. Its also usually an easy A.

My school offers a student taught LSAT prep/ Law school application course.

I teach it one day a week....because yeah my overall is only 166, but I own games.

Take speech/debate, as another poster recommended. Not necessary to do well on the LSAT, but at least in my case, the exposure to constant argumentation helped me better understand LR.

I can't speak for law school, but for the LSAT I agree with those who have said logic. Also, I think the best classes are those which require you to do serious reading of academic writing. Having to read large amounts of tedious writing will drastically improve your comfort on the RC section, as well as I think generally improve your performance overall.
