With only a projected LSAT score, you're not likely to get much useful advice on this forum.

Without more info about your actual numbers and where you're applying, I say throw out #1 (as you said, it comes across as "I want to save the world") and shoot for #2 or #3, though probably #3. My concern with #2 is that you went to college 10 years ago, so while that experience is definitely interesting, it may be better to showcase something more recent, like the accomplishments you describe in #3.

If your numbers are above both medians for a particular law school, then your PS is insignificant.
Nevertheless, any topic may work as a PS so a draft needs to be offered in order to receive reasonable advice.
If, however, you have been out of undergraduate school (university) for 10 years, then law schools want to know "Why law school for you at this stage of your life ? " A primary concern may be that you appear to be a perpetual student afraid of entering the real world.

There is an enormous difference between low 160s and 171+.
IMO, you should focus solely on the LSAT, and write your PS during the 4 weeks you are waiting to get your score back.
