I like option #1. It sounds very practical. You don't need to have had years of experience at this other job... you want to be a lawyer.

Sounds interesting, focused, and relevant, but make sure it's not pedantic and try to get some of "yourself" into it, don't just dump your resume/describe the job.
The others seem okay but while "working with others" and "planning projects" are great skills to have, they aren't entirely unique and could be plugged in anywhere, in my opinion.
Just start writing drafts!

#2 and #3 are boring as all get-out, #4 could be good if it's personal but not sappy, and I'd go with #1 if I were you. Law schools tend to love interesting work experience.
