reference meeting/corresponding w an adm. officer in why x?

so i have met an admissions officer at michigan during a law school fair at my college, and sent them an email a few days later asking a few questions, to which i received a very detailed response that helps a lot in my 'why michigan' essay. the email exchange as well as speaking in person were all very friendly and encouraging. should i reference the emails or meeting the officer in my 'why michigan' essay? is that unprofessional? helppp

I don't think it is bad to reference meeting with an adcomm, if anything it shows more genuine interest than "hey I checked out your website and you guys look awesome." That being said, if you use the content of your email discussions then I might refer to them as "talking to the adcomm" or "corresponding with the adcomm" rather than email just because email has the stigma of being impersonal.
