does anyone know why this is the case, and also if they have rules per font, spacing and such so that you might be able to squeeze a PS into their two page requirement?

No smaller than 11 pt font and don't mess with the margins. Just write your PS (mine originally was 3 and a half pages) and chop it down. You'll be amazed how you can convey your message with less words.

As far as "don't mess with the margins" goes, I would just say don't get ridiculous. MS word starts you off with 1.25" inches on each side, but 1.0" is typical and professional. Even 0.9" or 0.85" wouldn't be crazy or unprofessional. If you have to get that one extra sentence in to make your essay complete, it's better to have slightly smaller margins than a shitty essay. (But most people will tell you that you can trim down an essay, even if it's difficult) It's when you get to below .8 that it becomes obvious that you were messing with dimensions to squeeze you're essay in instead of focusing on fixing the writing.
