Help with this PI scholar essay

So I have to "describe [my] public interest goals and focus." Please tell me how to make an essay out of:
I would like to do human rights and civil rights work. My dream would be to work for Human Rights Watch or the ACLU.
I spent half of the space so far explaining how my work in undergrad and work experience have lead to this interest. Now what do I say beyond obviously human rights and civil rights are important and I like to help people?
