Same happened to me. I don't think about it much because there is nothing else that I can do. Just be sincere when completing the ethnicity section.

Also, "mucho mas importante" is to write a good diversity statement that explains your background and how it has helped shape who you are. A lot of schools have stated that simply checking the box is not enough and I would concur. Mine has to do with biculturalism and learning English as a second language.

PS I believe that with a solid application you can easily overcome your GPA and be accepted at a top 14. If you encountered some sort of socioeconomic disadvantage during college definitely mention it and explain how the situation will not happen again.

Important Question: Will I receive a Mexican American URM boost in schools that do not allow me to identify as such in the demographic portion of the application?

I didn't answer your question directly. It's difficult to quantify the exact boost, but I believe those schools that don't allow you to identify as MA on your applications will still consider you as an urm.
